Central Texas College issued the following announcement.
Culinary Arts students in the Central Texas College (CTC) Hospitality program contributed to Operation Stand Down this weekend using their specialty – food. For the fourth consecutive year, CTC culinary students have fed the homeless veterans participating in the event. This year’s menu was lasagna, green beans, peas and carrots, garlic rolls and chocolate chip cookies.
“Several classes combined efforts to prepare the food items,” said Guadalupe Bluhm de Saldivar, known to her students as Chef Lupita. “Students in my American Region Cuisine class, the dual credit high school students in my Nutrition class along with Chef Ramona Lezo’s Fundamentals of Baking class and Chef Keith Pascar’s and Chef Virgil Guy’s Basic Food Preparation classes all contributed to making the menu items.”
Also aiding in the cooking were students in the Culinary Arts Club. “Several years ago, the club was looking for a community service project to do,” said Chef Lupita. “Chef Lezo heard about Operation Stand Down and felt it was a very worthy cause. She reached out to them and we’ve been participating in the fall and spring events ever since.”
The students prepare a different menu each year. “In the past we’ve done fried chicken with mashed potatoes and corn, Salisbury steak and meatloaf,” said Chef Lezo. “We bag the chocolate chip cookies so they can take them with them and eat them later if they are full from the main menu. The goal is to prepare comfort foods for the veterans.”
Operation Stand Down Central Texas was created to assist homeless veterans and their families in the surrounding central Texas community. Part of the event is designed to provide homeless veterans access to short-term resources and ensure they have easy access to basic needs during the event including shelter, beds, food, showers, clothing and haircuts.
